Project Instructions

Step: 1

Advance Work: Make the fondant bows and flowers. For bows, use one package of fondant rolled out about 1/8- inch thick. Cut 11 strips 1 x 6 inches; reserve remaining fondant. Fold strips in half to form bows; attach with a damp brush. Roll a small ball of fondant for each bow and position at center.


Step: 2

For flowers and leaves, use 1 package fondant; tint 1/4 light rose, 1/4 dark rose, 1/4 green, and leave 1/4 white. Roll out fondant 1/8 inch thick and use flower ejector to cut approximately 360 small flowers: 120 each in light rose, dark rose, and white. Add tip 1 dot centers to each. Use leaf cutter from ejector set to make 150 green leaves. Make extras of all to allow for breakage and let dry.


Step: 3

Cake Preparation: Bake and cool 2 layer 9 1/4, 12 1/2, and 14 1/4 inch cakes. Ice smooth with white buttercream icing; use pink buttercream for sides of 14 1/4 inch cake. Prepare cakes for stacked construction. Divide top tier into eleven 3 inch divisions; middle tier into twelve 4 inch divisions; bottom tier into eleven 4 1/8 inch divisions.


Step: 4

On bottom tier, use largest nesting heart cookie cutter and reserved white fondant to cut out 11 hearts; immediately position one at each division point; edge each with tip 5 beads. Attach flower clusters and leaves to heart centers with tip 2 dots of icing. Pipe tip 1 vines around flowers. Pipe tip 12 heart bottom border; position flower at center of each heart.


Step: 5

On top and middle tiers, use tip 1 to pipe curlique lines on cake tops and sides. Between division points, position flowers in garland formation and leaves. Add tip 5 bead bottom border or both cakes. On middle tier attach bows and white fondant flowers between bows.


Step: 6

At the Reception: Raise the cake off the table using a board about 1 inch thick. The board should be slightly smaller in diameter than the base cake. Arrange baby's breath and position ornament.


Tips

This cake serves 124. The top tier of a wedding cake is often saved for the first anniversary, so this number of servings does not include the top tier.

Alway place a separator plate on the cake before you position any figurine or ornament. This protects both the cake and your keepsake. For extra stability, secure your topper to the plate with tacky craft tape.
