3 tablespoons Meringue Powder
4 cups (about 1 lb.) confectioners' sugar
6 tablespoons warm water
Makes: About 3 cups of icing.
For Royal Icing:
Beat all ingredients until icing forms peaks (7-10 minutes at low speed with a heavy-duty mixer, 10-12 minutes at high speed with a hand-held mixer).
Keep all utensils completely grease-free for proper icing consistency.
For stiffer icing, use 1 tablespoon less water.
When using large countertop mixer or for stiffer icing, use 1 tablespoon less water.
Thinned Royal Icing:
To thin for pouring, add 1 teaspoon water per cup of royal icing. Use grease-free spoon or spatula to stir slowly. Add 1/2 teaspoon water at a time until you reach proper consistency.
Vanilla-Sugar Cookies On-a-Stick
1 cup (2 sticks) unsalted butter, softened
1-1/2 cups granulated sugar
1-1/2 teaspoons pure vanilla extract
1/2 teaspoon No Color Almond Extract
2-3/4 cups all purpose flour
1 teaspoon salt
For Vanilla-Sugar Cookies on a Stick:
Preheat oven to 350°F. Spray pan with vegetable pan spray. In large bowl, beat butter with sugar until light and fluffy. Add egg and extracts. Combine flour and salt; add to butter mixture 1 cup at a time, mixing after each addition. Do not chill dough. Fill cavities with cookie dough to 1/8 in. below top edge; insert sticks into dough, covering 2 in. of end. Bake 20-22 minutes or until cookies are lightly browned.
Note: Dough can be tinted with Wilton Icing Color. Knead in small amounts until desired color is reached.
For chocolate cookies: Mix in 3 ounces of melted, unsweetened chocolate. Spray Cookie Treat Pan cavities with vegetable oil spray. Fill cavities with cookie dough to 1/8 inch below top edge; insert sticks into dough, covering 2 in. of end.
Bake on middle rack for 10 to 15 minutes. Cool 5 minutes, gently loosen with spatula, tip pan upside down to remove. Wash pan and repeat to bake remaining treats. Cool completely before decorating.

Prepare dough and press into pan following pan directions. Insert stick. Bake and cool.
Place cookies on cooling grid over waxed paper. Cover cookie with thinned yellow icing; tap to smooth and let set.
Outline inner star with tip 3 and full-strength white icing. Fill in with thinned white icing in cut parchment bag; let dry. Pipe tip 3 white dot border around inner star (pat smooth with finger dipped in cornstarch). Print tip 3 red name.
