  • VANILLA CUPCAKE RECIPE
  • 1 3/4 cups cake flour, not self-rising
  • 1 1/4 cups unbleached all-purpose flour
  • 2 cups sugar
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, cut into small cubes
  • 4 large eggs
  • 1 cup whole milk
  • 1 teaspoon pure vanilla extract
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 4 cups confectioner’s sugar
  • 1/4 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • FOOTBALL TRUFFLES
  • 1 package Oreo cookies
  • 8 ounces cream cheese, softened
  • Wilton Candy Melts in Dark Cocoa
  • Wilton Candy Melts in White

WHAT YOU’LL NEED

VANILLA CUPCAKE RECIPE

  • 1 3/4 cups cake flour, not self-rising
  • 1 1/4 cups unbleached all-purpose flour
  • 2 cups sugar
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, cut into small cubes
  • 4 large eggs
  • 1 cup whole milk
  • 1 teaspoon pure vanilla extract

Preheat oven to 325 degrees. Line cupcake pans with cupcake liners (you can use a plain white liner in addition to the tailgate liner if you want the colors to stay more brilliant). In the bowl of an electric mixer fitted with the paddle attachment, combine flours, sugar, baking powder, and salt. Mix on low speed until combined.  Add butter and mix for 1 minute.

In a separate bowl, whisk together eggs, milk, and vanilla. With mixer on medium speed, add wet ingredients slowly to dry ingredients and beat for 2 minutes. Do not overbeat.

Fill cupcake liners evenly with batter. Each cavity should be about 2/3 full of batter. Bake for 17 to 20 minutes or until a toothpick inserted in center comes out clean.

BUTTERCREAM FROSTING RECIPE

  • 1 cup (2 sticks) unsalted butter, room temperature
  • 4 cups confectioner’s sugar
  • 1/4 cup heavy whipping cream
  • 1 teaspoon vanilla extract

In an electric mixer fitted with paddle attachment, beat butter until whipped and creamy. Slowly add powdered sugar one cup at a time, mixing well after each addition. Add in heavy whipping cream and vanilla extract and beat for 3 minutes. Add in 5 drops of Leaf Green color and 2 drops of Juniper Green color. If too stiff, add more powdered sugar. If too loose, add more heavy whipping cream.  The goal is a consistency that when a knife is run through the frosting, it holds its shape.

FOOTBALL TRUFFLES

  • 1 package Oreo cookies
  • 8 ounces cream cheese, softened
  • Wilton Candy Melts in Dark Cocoa
  • Wilton Candy Melts in White

Crush Oreo cookies using a food processor. Mix well with softened cream cheese until a soft dough is formed. Use your hands to roll 1/2-inch balls and then mold into oval/football shapes. Place in freezer for at least 30 minutes. Meanwhile, melt Dark Cocoa Candy Melts. Dip frozen footballs in candy melts and let harden. Melt White Candy Melts and place in small plastic bag. Snip corner and pipe football lace details. Let harden.

DIRECTIONS

1.       Fill a piping bag fitted with decorating tip #233. Use short squeezes, pulling up each time to achieve a grass-like texture with the frosting on the cupcakes. Completely frost all cupcakes.

2.       Top each cupcake with a football truffle and tailgate pick!

3.       Serve up your tailgate cupcakes with cute Michael’s Tailgate napkins!
