cupcake basics

Learn the basics to your own beautiful cupcakes! We’ve teamed with Craftsy to show you three basic techniques for adding gorgeous buttercream designs to your cupcakes. Check out the video and instructions and make these tasty treats!
Step 1
To get started, use your cupcake corer tool to remove the inside of three pre-made cupcakes.
Step 2
Pour sprinkles into the holes made with your corer, then fill the top of each cupcake with extra cake.
Step 3
Next, insert the 1M tip inside a piping bag.
Step 4
Snip the pointed end of the bag with your food-safe scissors, so that the 1M pointed tip is exposed and ready to squeeze out the buttercream.
Step 5
With the small side of your fist, gently push down the buttercream so that it's nicely squished down to the bottom (narrowest) part of the piping bag.
Step 6
Once your buttercream is in place, tie the piping bag closed with an icing bag tie.
Step 7

To practice the "star dollop" buttercream technique, start with your tip in the center of the cupcake and squeeze. Apply firm pressure, allowing the icing to reach the edges of the cupcake, then slowly lift up and release pressure at the same time to finish the point.

TIP: Want to create a rainbow or striped effect? You can do this by adding different colors of buttercream to the same bag! 

Step 8
To practice the "rosette" buttercream technique, start with the tip in the center of the cupcake. Apply medium pressure to the bag and move in a circular motion around the center star, from the inside out. To taper the icing, lighten the amount of pressure you’re using as the tip meets the end point.
Step 9
To practice the "spiral petals" buttercream technique, you’ll start on the outside edge of the cupcake. Apply medium pressure to the bag to form a small star. Now, move the bag in a question mark shape, applying pressure as you move up and releasing pressure as you move down and towards the center. Repeat in a spiral pattern until the cupcake is covered with buttercream. Be careful to avoid disturbing the completed centers as you add petals.
Step 10

Pretty gum paste leaves are a great way to add detail to each cupcake rosette. To do this, prepare a clean working surface with a dusting of powdered sugar, then roll out your green gum paste to about ⅛" thickness. Use your leaf-shaped stamp to cut out a leaf form, then shape it a bit more with your fingers. Let the leaf dry until it’s firm, then place it onto your cupcake. Lovely!

TIP: We have so many cake and cupcake decorations! Try adding other embellishments like sprinkles, sparkling sugar, etc.
