mirror glaze snowflake cake

Step 1
Glaze Ingredients:
1 Cup Glucose
2 Cups (10 oz.) Candy Melts® Candy – Bright White
3 Envelopes (3/4 oz.) Unflavored Gelatin
Cold Water (½ cup plus 1 Tbsp. and 2/3 Cup)
1½ Cups Sugar
2/3 Cups (7 oz.) Sweetened Condensed Milk
 
 
Melt 3-4 oz. bright white Candy Melts® candy in decorating bag following package directions.
Step 2
Tape waxed paper to cake board. 
Step 3
Cut small opening in decorating bag and pipe snowflakes, ranging in size from 1" - 3". Make extras to allow for breakage. Chill until set, about 15-20 minutes. 
Step 4
Bake 8" x 2" cake following recipe directions. Cool completely and place on cake board. 
Step 5
Use spatula and 1½ cups icing to ice cake smooth. Chill until ready to pour glaze. 
Step 6
For the glaze, chop Candy Melts® candy and set aside. 
Step 7
In a large measuring cup, stir together gelatin and ½ cup plus 1 tablespoon cold water. Let sit for 5 minutes to bloom. 
Step 8
Add sweetened condensed milk and chopped Candy Melts® candy. 
Step 9
In a pot, combine glucose, sugar and 2/3 cup cold water. Cook over medium heat, stirring until sugar dissolves. Continue cooking until mixture reaches 217º F. 
Step 10
Pour hot sugar mixture over Candy Melts® mixture. Stir to combine, and then use an immersion blender or food processor to emulsify. 
Step 11
Strain mixture through mesh strainer to remove any air bubbles. 
Step 12
Divide mixture and tint 1 cup blue; do not mix color in completely. 
Step 13
Position cake on a cooling grid set over a sheet pan. 
Step 14
Add 2 cups white glaze to blue glaze. Do not mix. Pour colored mixtures over the top and down the sides of the cake, swirling together, covering entire cake. Refrigerate cake until set, approximately 15 minutes. Gently remove from grid and place on serving plate. 
Step 15
Make small marks in cake top with a knife to insert snowflakes to stand upright. Position candy snowflakes on cake top. 
Step 16
Add sprinkles.
