penguin valentine's day cupcakes

Who could refuse these show-stopping little penguins on Valentine’s Day? Lots of delicious buttercream icing and a few decorator tips are the keys to making these little guys easy *and* irresistible. Just whip up a dozen or more and send them out to steal a few hearts. (Look! They’ve got some already!)
Step 1
Quantities Needed:
1 Tsp. Pure Vanilla Extract
½ Cup Solid Vegetable Shortening
½ Cup (1 Stick) Butter (or Margarine), Softened
4 Cups Sifted Confectioners' Sugar (Approximately 1 lb.)
2 Tbsp. Milk

Prepare the cupcake batter by following your favorite recipe, whether it’s a box mix or from scratch. Bake the cupcakes, then let them cool.
Step 2
Prepare buttercream icing according to your favorite recipe.
Step 3
Tint a small amount of the icing red, and a second small amount orange, but leave most of the icing white.

TIP: We combined Christmas Red with Red-Red to make the red icing shown. We mixed Orange with Red-Red to make the orange icing shown.
Step 4
Fill a disposable decorating bag with white icing, then cut it open and add tip 1A according to the package directions. Pipe a white swirl onto one cupcake. Use your spatula to smooth and round the icing on top, so it looks like a little penguin-to-be. Repeat for all the other cupcakes.
Step 5
Fill a second decorating bag with red icing, snip the end and add tip 3. Outline a heart on each penguin’s chest and fill in the heart with red zigzags. Pat each heart smooth with your finger dipped in cornstarch.

TIP: As you work, just refer to the image on this page for placement of all the details. Don’t worry if they vary a bit from penguin to penguin, that’s part of their charm!
Step 6
Using chocolate decorator icing in a cut disposable decorating bag with tip 4 added, outline each penguin head and body, then fill in the space you outlined with zigzags. Use your spatula to smooth the chocolate icing.
Step 7
Use chocolate icing and tip 4 (the same as in Step 6) to add each penguin’s eyes.
Step 8
Don’t forget to give your adorable penguins their beaks! Place the orange icing in a cut disposable decorating bag with tip 352 and pipe a beak onto each one. Dust your fingers with a little cornstarch and use them to shape the beaks. Are these guys the cutest, or what?!
