peppermint-dipped chocolate cookies

Add this easy musts Peppermint-Dipped Chocolate Cookies recipe to your holiday baking this year! They are great for the office, gift giving, for Santa or simply indulge your own guilty pleasure!
Step 1

Preheat oven to 350°F. Line two cookie sheets with silicone baking mats.

TIP: If parchment paper is available, you can use it instead of a silicone mat. 

Step 2

Mix cake mix, oil and eggs with a hand mixer (or a wooden spoon) until smooth.

NOTE: You will need:

   -  1 Box Aapprox 15 ounces) Chocolate Cake Mix
   -  ½ Cup Vegetable Oil
   -  2 Large Eggs 
Step 3

Drop by two tablespoonfuls of dough onto prepared cookie sheets, about 2" apart. Bake for 10-13 minutes or until just done on the top (no longer glossy). Set aside to cool. 

Step 4

Melt white chocolate Candy Melts® as directed on packaging. 

Step 5

Dip cooled cookies in melted white chocolate and sprinkle with peppermint bits. Chill to set.
