This chili can be dried (in this form it is known as the ancho chili). This chili boasts a dark rich green color, a shiny exterior, an elongated shape, and a unique flavor. Poblano chilis are much milder that other varieites. The flavor is vegetal with subtle grassy notes. If left to turn red, the flavor is more earthy.
